Gastronom\u00eda Sostenible<\/span><\/strong><\/h2>

La sostenibilidad en la gastronom\u00eda se ha convertido en uno de los v\u00e9rtices sobre los que se apoyan las propuestas culinarias de muchos chefs valencianos, y para conmemorar el d\u00eda de la Gastronom\u00eda Sostenible, los restaurantes El Poblet, Casa Monta\u00f1a, Apicius, RIFF, Ricard Camarena, Sucursal y Ampar nos muestran c\u00f3mo trabajan ya en c\u00f3digo sostenible.<\/span><\/p>

En las diferentes recetas recogen 4 conceptos claves. \u201cNose to Tail\u201d, aprovechamiento, la conservaci\u00f3n de tradiciones culinarias, y el apoyo a productores locales, consumiendo en org\u00e1nico y productos de temporada.<\/span>

Foro de la Sala<\/span><\/strong><\/h2>

Tras la buena acogida el a\u00f1o pasado del debate \u201cLa sala. Todo un mundo por\u00a0descubrir\u201d, este 2021, se realizar\u00e1n diferentes desayunos networking en donde\u00a0camareros,\u00a0sommeliers\u00a0y jefes de sala pondr\u00e1n en com\u00fan temas relacionados con\u00a0su profesi\u00f3n como la formaci\u00f3n, la vocaci\u00f3n y la profesionalizaci\u00f3n del sector.\u00a0 Esta\u00a0iniciativa pretende, entre otros objetivos, dar visibilidad y reivindicar la importancia de la profesi\u00f3n de camarero, tan afectada por la coyuntura actual.<\/span><\/p><\/div>
